Beef Fillet Steak – 200gm
Prosciutto Stips (Thinly sliced)
Pepper & salt to season
1) Roll strips of prosciutto around the fillet steak
2) Season well with pepper and salt
3) Place in a hot pan and brown top and bottom to finish off in the oven for approx. 17 mins at 180°c. Allow the beef to rest for the next 5 mins while you make the jus: Pour some beef stock into the same pan with the orinigal juices left over and add some port or strong red wine, reduced by 2/3 thereafter.
4) Served with parmesan potato mash or smoked tomatoes along with HUNTER'S PINOT NOIR
