• 400 g Game Farm Quail Medallions (cut in half lengthways)
• 350 g Fine fettuccine or thin spaghetti
• 80 ml Olive oil
• 2 Cloves of fresh garlic, roughly chopped
• 2 small red chillies, washed, deseeded and roughly chopped
• ½ bunch Parsley
• ½ bunch Corriander
• 60 g Parmesan cheese grated
• Salt and Pepper to taste
1. Cook pasta.
2. In a fry pan heat up the olive oil on a low heat, add chilli and garlic and cook gently to infuse the flavour into the oil.
3. Season Game Farm Quail Medallions with salt and pepper and place into the oil, cook gently to your liking.
4. Add pasta, cheese and herbs, toss, check seasoning and serve.
Note: Be aware of the degree of heat and adjust chillies accordingly
