• 400 g Game Farm Quail Medallions
• 80 g Baby rocket, washed
• 8 Cherry tomatoes, washed and cut in half
• 100 g Goat's fetta
• 100 g Olives
• 4 tbsp Extra virgin olive oil
• 4 tbsp Balsamic glace
• 2 tbsp Vegetable oil
• Salt and pepper to taste
1. Pour vegetable oil into a fry pan and heat.
2. Season Game Farm Quail Medallions with salt and pepper, cook to your liking then set aside.
3. Place rocket, fetta, olives and cherry tomatoes onto a plate and sprinkle with salt and pepper.
4. Place Game Farm Quail Medallions on top, drizzle with olive oil and decorate plate with balsamic glaze.
Variation: Use shaved parmesan or Persian fetta instead of goats fetta.
