1pkt Asari clam
1 bundle Enoki mushroom
1 stalk of thinly sliced lemon grass
1 sprig of chopped coriander leave
1 ginger thinly sliced
2 pcs lime leaves
5 pcs chili padi
1 cup lime juice
1 sliced onion
1 cup water
2 tbs fish sauce
1 blue ginger
1litre chicken stock
1 tbs sugar
Pour the chicken stock in a stock pot.
Add in the lemongrass, onion, blue ginger, lime leaves, fish sauce and bring to a boil.
Once boiled, add in the chilli padi, the fish sauce and lastly add in the Asari Clam. Add in the sugarSeason with salt and pepper for taste
Add the enoki mushrooms during the last 2 minutes of cooking time. Serve in individual bowls.
